Though small, she’s mighty. The Damson Plum, notable for her tiny stature and extra tart, almost astringent finish, and dark purple skin, is a jam makers dream. Cultivated for centuries and prized in preserving circles – this is the ONE preserve we don’t add anything but organic sugar to. No lemon, no aromatic, no herb. She stands on her own: deep tart plum, with a silky texture, and just a hint of tannins on the finish. Or beside a triple creme brie; though we’re partial to dipping shortbread fingers directly into the jar.
