At the height of ripeness these local delicacies (discovered growing wild on Orcas in the 1970s) cook beautifully into a rosy preserve, with notes of ginger from our fresh kitchen garden grown bay leaves.

A sweet little treasure of Orcas agricultural history, these pears are the perfect example of a roadside tree adapting itself perfectly to the island climate. We re proud to be stewards of this delicious pears future (Grow more, people! Grow more!).

Highly versatile, this preserve is a gorgeous topping to panna cotta and cheesecake, and adds a sweet, lightly herbal note to cheese pairings and charcuterie boards. We adore it with Cypress Grove s Humboldt Fog or slathered between a wedge of brie, wrapped in puff pastry, and baked. But don’t be afraid to get crazy and deglaze a pork chop with it too.
